florence’s finest flavours | locale firenze

Florence has been Europe’s epicentre of fine art for centuries. Its woven into the city’s way of living from the music that echoes through its cobbled streets to the kitchens of the city’s finest restaurants. Through the frame of heritage, Locale Firenze dares to reinvent what you thought you knew of Tuscan cuisine.

Nestled in a side street within the historic city centre, Locale Firenze sits within the Cocini Palace which dates back to the 16th century. It features a swanky bar with tall glass ceilings and a uniquely immersive cocktail experience. Ranked as one of the world’s 50 best bars, their cocktail menu is playful and tongue-in-cheek. Each drink is assigned to a common Italian hand gesture that guests are encouraged to use when ordering. If you’re unfamiliar with the theatrics of Italian hand gestures, take a look at your drink coaster. They feature images of Locale Firenze staff dressed in medieval attire, embodying one gesture for each item on the menu.

The cocktails on offer are creative and unexpected riffs on familiar flavours. Locale Firenze’s experimental spirit is perhaps captured best in its 13th century basement which stores local wine and houses a mixology lab dedicated to unique kombucha flavours like mushroom and miso. The intrigue around the drinks alone makes Locale Firenze worth a visit, if only to whet your appetite before entering the restaurant.

In a city that knows its roots and sticks to them, Locale Firenze is a breath of fresh air. Florentine executive chef Simone Caponnetto crafted a menu that keeps you on your toes and is unafraid to draw outside the lines of tradition. In presentation, the menu is whimsical and fantastical, almost mirroring the grandeur of the palace it sits in. The menu is a tasteful journey across Tuscan cuisine with ingredients sourced from a local garden. Caponnetto uses the wealth of skills he acquired from acclaimed kitchens across the world to balance Tuscan simplicity with complex techniques.

There’s lamb tartare with zesty BBQ sauce crowned with a crispy topping that is both bright and well seasoned, buttery turbot fillet  with summer truffle that melts in your mouth, a seafood salad layered with lettuce and bottarga with a warm hit of ginger, and fusilloni pasta with aged tomato, tomato vines and basil, a classic utilising local produce. The dessert offering is both light and indulgent, drizzling honey straight from the honey comb over fresh ricotta and sharp pecorino shavings. Its creaminess is cut perfectly with salt, sweet and tang. Thanks to its passionate team, Locale Firenze takes the richness of Tuscan cuisine and serves it back to you through a brand new lens.
